I Cajarè Rosato DOC 2024 is crafted from a blend of Nebbiolo and Dolcetto, two native grape varieties known for their character and balance. This rosé captures the freshness of the region and the finesse of its heritage, offering a dry, gastronomic style.
Vineyard & Vinification:
Grapes are hand-harvested from hillside vineyards with calcareous soils and cool exposures. After gentle pressing, the juice undergoes a short skin maceration to extract a delicate pink hue. Fermentation is carried out in stainless steel at controlled temperatures to retain freshness and aromatic purity. The wine is then briefly aged on fine lees for added texture and complexity.
