Growing area
The Grenache grapes used in El Molar come from three different parcels in our property situated on the slopes of Sierra del Molar. These parcels have different types of sandy loam soils. The vines have an average age of between 13 and 16 years old. All the grapes are dry-farmed.

Vinification
Minimal intervention. Fermentation is traditional and spontaneous with indigenous yeast and temperature control ( 30o to 32o C ) in underground stone vats. We destemmed 50% of the grapes and 50% were whole bunches. Malolactic fermentation took place entirely in fudres.

Aging
Aged for 14 months in 5000 and 500 liters fudres.
